Roasting your entire dinner on a baking sheet is such a fun easy meal idea. For this one, I wanted to create a plant-based sheet pan dinner that loads on the veggies, and it’s become a reader favorite recipe!

This recipe highlights four super-nutritious vegetables all at once, and it’s seriously tasty. It’s perfect for meal prep for healthy dinners or lunches throughout the week. My family always requests this one!


Easy Veggie Sheet Pan Dinner

Time: 45 minutes

Serves: 4

Dairy-Free, Gluten-Free, Vegetarian, Vegan

Ingredients

  • 1 crown broccoli (1/2 pound), chopped into florets

  • 1 medium red onion, sliced into thick slices

  • 1 1/2 pounds sweet potatoes (about 2 medium large), diced

  • 1 pound red potatoes (about 2 medium), diced

  • 1 red bello pepper, diced

  • 1 15-ounce can chickpeas (or 1 ½ cups cooked)

  • 1/4 cup olive oil

  • 2 teaspoons garlic powder

  • 2 teaspoons Old Bay seasoning*

  • 1 tablespoon Italian seasoning

  • 1 teaspoon kosher salt

  • 1 lemon

  • Rice, quinoa, or couscous, to serve

  • Dollop of sour cream, Greek yogurt, cashew cream, or hummus, to serve
