Sheet Pan Fajitas
One of my very favorite easy dinner ideas is fajitas. Everyone loves this meal, and it’s easy to customize according to your tastes and diet. I love making it as either fajitas with tortillas, or a Fajita Salad served over greens.
Flex Dinner: You can make this recipe two ways: Veggie or or Shrimp! The vegan version is a great way to make a fun healthy dinner where no one notices there’s no meat! Or the shrimp version is just as tasty. They’re both easy to whip up on a sheet pan.
Sheet Pan Fajitas (Veggie or Shrimp)
Time: 35 minutes (Shrimp) or 40 minutes (Veggie)

Dairy-Free, Gluten-Free (with corn tortillas), Vegetarian, Vegan
Ingredients
For the Veggie Sheet Pan Fajitas
1 white onion, thinly sliced
2 bell peppers, thinly sliced
1 head cauliflower, sliced into florets
1 portobello mushroom, chopped into bite-sized pieces
2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika (or regular)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
OR…For the Shrimp Sheet Pan Fajitas
3 bell peppers, thinly sliced
1 small red onion, thinly sliced
1 small white onion, thinly sliced
4 tablespoons olive oil. divided
2 teaspoons cumin
1 teaspoon each chili powder, garlic powder, and smoked paprika*
1 3/4 teaspoons kosher salt, divided
1 pound medium shrimp, tail off or on, thawed and patted dry
3 garlic cloves, minced
½ teaspoon dried oregano
½ teaspoon onion powder
For serving (either one!)
2 ripe avocados
1 lime
½ teaspoon kosher salt
Fresh cilantro
8 flour or corn tortillas (you can also serve over greens as a Fajita Salad; this way it would be great with the Salsa Special Sauce from these Smash Burger Tacos)
1 15-ounce can vegetarian refried beans
